Serves 8-10
Ingredients:
100g cocoa powder
6 eggs, separated
100ml sunflower oil
200g plain flour
150g caster sugar
1 tsp baking powder
Ganache:
50ml thickened cream
80g white chocolate, broken into pieces
Mini chocolate Easter eggs for decoration
Steps:
1. Preheat the oven to 180°C. Grease and line a 30cm springform cake tin with baking paper.
2. Place 100ml water in a small saucepan over a low heat, add the cocoa powder and stir to combine. Stand until lukewarm.
3. Pour cocoa mixture into a large mixing bowl, then gradually add the egg yolks and sunflower oil, beating until well combined.
4. Sift in the flour, half the sugar, baking powder and a pinch of salt, then beat until the mixture is light and fluffy.
5. In a separate large bowl, whisk the egg whites until they form stiff peaks, then gradually add the remaining sugar, whisking to combine.
6. Gently fold the egg white mixture into the chocolate mixture using circular motions.
7. Pour the batter into prepared tin and bake for 40-50 minutes. (To check if the cake is done, insert a skewer into the centre; it’s ready when the skewer comes out clean.) Allow cake to cool slightly in the tin, then remove to a cooling rack, reserving crumbs.
8. For the ganache, place cream in a small microwave-safe bowl, add the white chocolate and microwave on a high heat to melt and combine. Stir in reserved cake crumbs to add texture, then stand to cool.
9. Once the cake has completely cooled, place on a serving stand or plate, pour the ganache over
the top, allowing it to dribble down the sides, then decorate with mini chocolate eggs.
