Fire up your smoker or barbecue to make delicious Greek-style lamb kofta served with creamy garlic sauce, fresh cherry tomatoes and pita bread.

Ingredients
4 rounds souvlaki or pita bread
Lemon wedges and truss cherry tomatoes, to serve
Oregano leaves or sprigs, to garnish
Lamb kofta
500g lamb mince
½ red onion, grated
2 tbsp oregano leaves, finely chopped
1 tsp lemon zest, finely grated
½ tsp ground black pepper
1 tbsp Matador Gyros & Souvlaki BBQ Rub (or other Greek seasoning), plus extra to serve
Creamy garlic sauce
1 tbsp tahini
1 tbsp warm water
1 tbsp lemon juice
1 cup garlic dip
Method
1. To make the lamb kofta, use your hands to combine all ingredients in a bowl. Divide mixture into eight equal portions, shape into logs about 8cm long. Put lamb kofta on a plate and refrigerate, covered, for 30 minutes.
2. To make the creamy garlic sauce, put tahini, water and lemon juice in a small bowl and whisk until smooth. Then whisk in garlic dip and refrigerate until required. Sprinkle creamy garlic sauce with rub to serve.
3. Preheat a pellet grill smoker to 200°C (350°F) or a barbecue to medium. Cook lamb kofta, turning occasionally, for about 10 minutes or until browned all over and cooked through. Place pita bread on grill and heat until lightly browned on each side.
4. Arrange lamb kofta on a serving platter with creamy garlic sauce, pita bread, lemon wedges and tomatoes. Garnish with oregano to serve.
Keep in mind…
- Follow manufacturer’s instructions for setting up and using your smoker or barbecue. Position it on a flat and clear, well-ventilated space outdoors and never leave a lit appliance unattended.
- Before using a gas barbecue, check the gas hose – do not use if it is crushed, kinked or cracked – and also that your LPG cylinder is in date.
- Keep children and pets away from smokers and barbecues, and put matches and lighters out of children’s reach.
- Check with your local fire service about using your smoker or barbecue during restrictions such as fire bans.
