prosciutto-wrapped prawns with a basil aioli
The recipe for prosciutto-wrapped prawns is simple yet impressive. Cook them on the barbecue and serve with homemade basil aioli.

Ingredients

Makes 20

4 garlic cloves, crushed

1 tbsp chopped parsley

2 tbsp olive oil

20 large green prawns, peeled, tails intact

100g thinly sliced prosciutto

Basil aioli

½ cup aioli or whole egg mayonnaise

1 tbsp lemon juice

Method

1. Combine the garlic, parsley and oil in a bowl. Add the prawns and stir to coat. Marinate overnight if time permits.

4. Cook prawns on the preheated grill plate for about 10 minutes, turning halfway, or until cooked through.

5. Serve prawns with basil aioli, garnished with the extra basil leaves.
