How to clean your Pit Boss pellet grill or smoker

4 garlic cloves, crushed
1 tbsp chopped parsley
2 tbsp olive oil
20 large green prawns, peeled, tails intact
100g thinly sliced prosciutto
½ cup aioli or whole egg mayonnaise
1 tbsp chopped basil, plus extra leaves to garnish
1 tbsp lemon juice
1. Combine the garlic, parsley and oil in a bowl. Add the prawns and stir to coat. Marinate overnight if time permits.
2. Preheat the barbecue to low. Cut prosciutto slices into approximately 10cm x 2cm strips. Wrap each prawn with a strip of prosciutto and secure with a toothpick.
3. To make the basil aioli, combine aioli, basil and lemon juice in a small bowl and mix until smooth.
4. Cook prawns on the preheated grill plate for about 10 minutes, turning halfway, or until cooked through.
5. Serve prawns with basil aioli, garnished with the extra basil leaves.
