How to clean your Pit Boss pellet grill or smoker

1.5kg chicken breast or thigh fillets (see Tip, below)
3 garlic cloves, crushed
2 tsp onion powder
Sea-salt flakes and freshly ground black pepper, to season
Oil, for barbecuing
Lemon wedges, to serve
¼ cup tomato sauce
2 tbsp hickory and brown sugar barbecue sauce or barbecue sauce
2 tbsp olive oil
1½ tbsp apple cider vinegar
2 tsp chipotle sauce
1. Cut chicken into 2cm cubes and put in a bowl. Add garlic and onion powder, season and stir until mixed.
2. To make the chipotle marinade, combine all the ingredients in a bowl. Add chicken, stir until mixed, cover and refrigerate for 2 hours.
3. Soak 12 x 25cm wooden skewers in cold water for 10 minutes. Thread the chicken onto the skewers and discard any remaining chipotle marinade.
4. Preheat barbecue to medium. Drizzle chicken skewers with oil and place on the barbecue hotplate. Cook for 10-12 minutes with the lid down, turning occasionally, until cooked. Serve chipotle chicken skewers with lemon wedges.
Tip: If you tend to overcook your meat, use thigh fillets, which can sustain longer cooking times and stay tender.
