This compact bushy perennial plant has clover like foliage and exotic, bright red roots that are used as food. The knobbly tubers look like wrinkly carrots and can be used much the same as potatoes are used, (boiled, baked or fried) but unlike potatoes, Oca can be eaten raw in many different ways. The foliage is also edible and can be used in salads.
Position - Semi shade (best), tolerates full sun if under 28 degrees.
Climate - Dislikes tropical climates.
Planting time - Winter to Spring.
Watering - Normal watering is required during dry periods.
Harvest time - Tubers start forming 4 months after planting and production peaks at 6 months.
Fertilising - Dig the soil well and add a liberal quantity of organic fertiliser prior to planting. After harvesting, re fertilise in preparation for the new growing season
Growing Tips - Planting width: 25cm apart. Planting depth: 5cm. Soil can be hilled around plants as they are growing to encourage a larger yield. Once tubers are ready for harvest, foliage will begin to die back. Tubers can be stored at room temperature for several months after harvest.
